Low Fat....but very good
1 beaten egg
3 Tbs. milk
1 c finely crushed saltine crackers
1 tsp dried thyme, crushed
1/2 tsp paprika
1/8 tsp pepper
2 to 2 1/2lbs chicken, I used boneless skinless breasts
2 Tbs. butter, melted
Combine egg and milk in small bowl, big enough to dip the chicken in. In a shallow dish mix crushed crackers, thyme, paprika and pepper. Set aside. Wash chicken and pat dry. Dip chicken in egg mixture and then coat with dry ingredient. Place in a 13x9x2 so they don't touch.Drizzle chicken with melted butter. Bake at 375 degrees for 45 to 55 minutes or till there is no more pink.

Apple Dumplings
Ingredients:
4 Granny Smith or Delicious apples peeled and cored
2 cans croissants
1 c sugar (I use Splenda)
1 1/4 c butter
1 tsp vanilla or almond extract
1/2 can of Sprite, Sierra Mist soda pop (I use diet Cherry 7-up)
1/2 c sugar/cinnamon mix (I use Splenda)
Directions:
Pre-heat oven to 350F. Cut apples into fours. Wrap apples inside of dough (think pigs in a blanket). Put in baking pan about 1 inch apart. In a saucepan, combine butter, vanilla or almond extract and sugar. Cook until butter barely melts and sugar has dissolved. Once melted, pour over apple dumplings and sprinkle sugar/cinnamon mixture over the top. Pour soda pop in bottom of pan. Bake approx. 30 - 35 minutes or until golden brown. Let cool for 10-12 min.
Tips: great with ice cream or whipped cream Makes 16 dumplings
If you have any left I want them!! Everybody loves these and they are so easy. The kids can help "wrap" the apples.

Cowboy Stew
2lbs. ground meat- browned
3/4 lb. bacon, cut in small pieces
1 cup chopped onion
3 sm cans pork and beans
1 cup ketchup
1/4 cup brown sugar
1 T liquid smoke
3 T white vinegar
1 T salt
dash of pepper
Pour all ingredients in crock pot and cook for 4 to 6 hours. Or put on the stove and cook for about 1 hour. We like our bacon a little crispier so I cook it before I put it in with the other ingredients.
This is so simple to make! I like to serve it with cornbread but Todd likes it by itself. Hope you enjoy.
